I think the first question is why you're doing it? For most of these machines, especially around the age you've got, unless you happen to have a spare engine sitting around, there's no good reason to do so. It's, literally, cheaper to buy another bike then to replace most of the parts/replace the engine of a Shadow from the early 80's. You can get a running Shadow 700-950 size from 1983-1985 for around 1k, pretty easilly.
That said, tearing downt he bik isn't too difficult if you've got a bit of mechanical inclination, the tools and space to do it, and a good book. Getting it back together and running is something else entirely. It's definitely a project. I've got my 84 700C in the garage right now, carbs off and half disassembled.
