I bought a VT700 with an extra wide tire, dam thing scraped against the swing arm..I wouldn't ride it 100 yards..when I lean into a corner I like to know I have the best tire for the job..

You can probably go one size fatter on the rear without handling issues.
I went almost 3/4" wider, and 3/4" taller on the rear tire (Kuhmo Solus car tire) without any handling issues. I'm not an aggressive rider, but still, I haven't noticed much difference with the wider, taller tire. Your best bet is to measure your stock tire, then go shopping with your tape measure. Bike tires don't expand much after inflation anyways.
