I'm very new to riding and have only rode about 100 miles so far. I'm having a little problem with shifting because I can barely get my boot under the shifter since it's so stubby. It's to short to reach the middle of my boot, it just catches the edge of my big toe which is a little frustrating. Is there any way the make it longer?

There is no adjustment to make it longer, you can adjust it up and down, but the only way to make it longer would be to cut it and weld a piece of flat bar or something in there
