It's a Shadow. For the most part, it's good to go bone stock for many, many miles. Aftermarket "must haves" are pretty much personal taste and preference. If you do a lot of traveling, you'll want saddlebags and probably a windshield. Lot of night riding, a light bar and and upgrade to a Silverstar bulb or HID. Tall, forward controls. As was said, you're lucky in that there are a lot of aftermarket goodies for your bike. (try finding accessories for my fave Shadow, an '85 VT700C) But as far as improving the bike, well, Honda did it pretty good from the factory.
I personally prefer Samson for aftermarket exhaust, I've had okay luck with Vance & Hines (just stay away from the "tips" if you live in a humid area, can lead to internal rusting), they're all fairly decent. Might help if you told us if you're looking for louder pipes, open exhaust, etc. Just remember that when you swap out exhausts, you're more than likely going to have to rejet your carbs. Don't expect to get the HD sound either do to it being a "twin pin" engine. The performance factor will probalbly be minimal if any. The stock pipes on my Spirit have gotten more noticeable with age. (12,600 + mi.) I like hearing other sounds that are much more crucial to my riding. The wind, engine, tires, other traffic, other MC horns

You will make the Sabre "LOUD", but no Harley Sound, engine guards are nice as then you can add highway pegs, you have to determine what style you want the bike then begin the add on's, just look at some of the pictures here of other riders and go from there..............

I thought the same way when I first got my bike. I wanted to go louder, but not annoyingly loud, like most around here. I know the bike wouldn't have the "potato-potato-potato" sound of a single pins crank engine, but I DID want a lower rumble to it.
I've had Vance & Hines, Jardines and HD Screamin' Eagles on it and all of them were too loud for my tastes. I eventually went back to a stock system with the "hole-saw" mod and it's about as good as it gets. My 1100 Shadow is mainly used for long trips, as I ride my bobber for the shorter trips to work, etc. I didn't want to get a headache from the sound and wanted to hear the radio while riding. I like riding early and starting up a loud bike and letting it warm up at a motel isn't cool.

I have V&H Longshots that are cut down and no doubt about it, they are a loud pipe.

Replaced the stock seat with a Mustang. The BEST money I spent on the bike!! Vance & Hines longshots but they are loud.
