Angry Bike losing power...need help

Long story short...decided to go out for a ride yesterday. Did the back roads @55mph - 60mph and everything was fine. Then hit the state highway @65mph and immediately the bike completely lost power . Revving the throttle made no difference. Was able to pull over to the side safely.
Bike started up immediately without any issues, kept my speed limit under 60 for a while. Decided to cut short my ride and take another state highway home. Again as soon as I hit 65 at cruise speeds, felt like the bike started losing power and was going to die. Not sure if I eased the throttle or revved it at that time, but the bike backfired as I heard a pop and immediately felt the response back from the throttle. After that kept my bike under 60 and got back home safely.
I can do 55-60 on 4th gear without an issue. As soon as I hit 5th and try to hit 65+ I just feel that the bike is struggling. I just replaced the R/R and battery last week.
Trying to figure out if this is an electrical or fuel related issue. Bike is an 06' Aero with about 2600 miles on it and after-market pipes and air filter. Not exactly savvy with motorcycles, but a quick learner. I am at a loss here and not sure where to start or to just take it to the mechanic and have them take a look at it.

I have learnt a lot from these forums since the time I bought my bike and I am posting this hoping ya'll can help me troubleshoot this annoying issue.

Is the 2006 carburated?

Was the bike re-jetted after the exhaust was installed?

Sounds like it's sucking fuel outta the bowl faster than the tank can get more back into it. I would start by checking the tank petcock filter.

Did you re-jet the carbs after installing the after market exhaust?

Yes, this bike does have a carb. Not really sure if it was re-jetted since I bought the bike used from the dealer with the after-market exhausts. I did have issues with the petcock leaking fuel some time back and this went away when I replaced the petcock O-ring.
I do have the petcock fuel screen ordered and on the way. I should be getting it in the next couple of days.

It will likely be pretty obvious when you go to replace the tank screen but, if you find there is a lot of junk in the old screen don't just swap in the new one. Start looking hard at the interior condition of the tank. I've read several thread here about people who had to treat the inside for corrosion. And also, if the screen is plugged, you might want to think about that carburator getting cleaned out either by you, or by a shop. Wouldn't take much to plug up a jet (although what you describe, IIRC, would be more about the needle/slider/spring at that much throttle).

What's even weird is I rode the bike 2 days back on the interstate and hit 65-70 on 5th gear and I had absolutely no issues. No hiccups at all. Kinda surprised with this one. The only difference I can noticeably tell from the 2 days I rode was that yesterday was windier than my ride 2 days back.

How strong were the winds? Head wind or cross winds?

Even strong winds shouldn't be kicking it that hard at 60-70mph. Anything else odd about the place you were riding? Do you live in an area with major altitude changes or anything like that?

Default Stupid Petc0ck

So here's my update to the this problem I was having. Turned out to be the diaphragm in the petcock. Switched out the part and also put in a new fuel filter screen and I am back in business.
