It's not likely a problem with your choke -- it seems to be working as it should.

You're getting too much air or not enough fuel.

Make sure the air cleaner is installed
Make sure the carb boots are OK
Add the recommended dosage of fuel treatment (people seem to like Seafoam or Berryman's B12) to your tank and run it through
Clean your carbs and check your float level

Do you know how to adjust the fuel/air on a shadow 750. I've tried everything you mentioned. I'm running b-12 through tank now. I've been driving with 1/2 choke and everything is fine till 10 min in and choke will work its way all the way in and the bike will stall while driving..

Back the the first principle of troubleshooting:
Try NOT to overlook the obvious !!

Sounds to me like you might have two very simple problems; idle stop screw missing or not set right......assuming it is stalling out just because the idle speed drops too low......and you can keep it running at a proper idle speed just by cracking the throttle a bit with the choke off...AND the "drag" adjustment on the choke needs a little tweek.

You may have a low speed jet problem but I'd think it would run rough as the speed drops if that was the case. The cleaner may help.
