Does anyone know what the torque spec is for the lower riser nut on a 2005 Spirit 1100? (The one that goes through the fork bridge, not the handlebar clamp bolts) I don't see it in the service manual or in the Clymer manual.

Perhaps just tighten securely?

I can't quite determine which item you're referring to, but try this:

Handlebar upper holder bolt = 22 ft/lbs
Fork cap = 17 ft/lbs
Fork socket bolt = 14 ft/lbs
Steering stem nut = 76 ft/lbs
Upper fork pinch bolt = 8 ft/lbs
Lower for pinch bolt = 36 ft/lbs

Yes, badly phrased.

What I'm looking for is the torque value for the single bolt that attaches each riser to the triple tree. I bought Chenzohs riser extensions and want to make the risers are secure.

2005 Spirit 1100

Here's what I bought:

There is no specific torque value for that 8mm nut in the manual. Just go with the common value for an 8mm flange nut - 20 ft/lbs.
