I Just picked up a bike that only runs with the choke out, but it runs great when its out. I just put in some Seafoam thinking the carbs just need to be cleaned, any other ideas? I'll keep you updated if the sea foam works at all.

yup to this.

check anything air and fuel related all the way from tank screen up to the carb. check for intake leaks if the carb isnt seated in the intake manifold properly or there is an air leak there she will get too much air. and so on.

Speaking from experience air leaks are not always (if ever) visible from a visual inspection. Mine looked fine but a quick squirt of starting fluid around the intakes quickly showed me I had air leaks. Also, I love seafoam but from what I've seen if you are using it to fix a problem that you noticed it is too late to try seafoam in most cases.

Short update, I sprayed some carb cleaner all over the carb with no spike in rpms. The engine actually died which is telling me that it is running too rich which it smells like anyhow. I am an idiot though because I had never messed around with the idle screw, forgot I had one..lol. Been a little while since Ive had a carbureted bike. I adjusted the screw because it was all of the way out and now it is sitting roughly 2/3s the way in and it idles much better, but was studdering a bit. I took it for a short ride and now it is running much better, still a little off though but I'll wait till I get at least one tank with the sea foam through the carbs before I go as far as tearing them down. I did have another question though, how far should the idle screw be in/out?
